Ever have a watermelon go bad but is still edible? I sure have. I still attempt to eat it even though there are spots where it is a little gritty. Then it dawned on me, I could just blend it all up in my Vitamix and make it into a refreshing summer drink! This way, I wouldn't be able to tell the bad parts from the good parts, they would all be blended together into a yummy drink.
Once I realized my watermelon was going bad and didn't want to eat a whole watermelon in one sitting. I decided that I was going to make watermelon juice. I immediately cut the watermelon up and put it in the refrigerator for 24 hours to keep cold before I started to blend it.
You do not need to put it in the refrigerator before blending it, it doesn't matter. However, I knew I was going to want some right away and warm watermelon juice didn't sound too delicious.
You will need
2-quart size mason jars (more if you have a big watermelon)
1 small watermelon
Here is what I did
Used a spoon to scoop out all of the pink flesh from the rinds.
I put the rinds to the side for composting. Next time, I will attempt to make a pickled treat using them, but today I was in a hurry.
Filled up the blender to the max fill line with the pink flesh
Ran on high for 1 minute (it takes a little bit to get started since I don't add any water)
Poured the juice into my mason jar and bam - you are done!
I did this two times for a small watermelon, if yours is bigger, it will probably take a couple more.
More things you can do
You can strain the juice if you want to. It is all dependent on how high speed your blender is. Mine smooths it right up and adds a little thickness that I really like.
Adding fresh mint into the blender before blending it will make this drink extra refreshing
I wouldn't recommend keeping it in the fridge for more than 2 days. Plus, this is too good for you to not enjoy it immediately.
